The torque applied is down to the diameter/size of screw and its construction, A2 stainless is softer than A4 stainless which is softer than carbon steel which is softer than Alloy steels, then you need to consider if the screw is dry or lubricated.
As an example an M4 screw torque is going to be in the range of 1.5-3.6 Nm and an M5 screw will be around twice this.
