Hi can anyone point me to the correct answer ?? ...can I use say a .308 crimp to do the crimp on say .303 or .300 if I got the right shell holder ...remember it doesn't need to be critical for safety reasons

You can increase and decrease the crimp pressure on any of the Lee factory crimp dies, but I am not sure if they are transferable. The things are cheap enough so why not buy one and try it. .308 bullet, could be as low as .306 (if you used some service 7.62x51 bullets) and .303 is usually actually .311.
The bullet would be hollow I guess, so this may factor a bit as the crimp needs something to work against and generally creates its own canelure.

If you’re using the lee factory crimp die the position of the crimp will be wrong, unless the ‘other’ case is the same length as the specified calibre.
