Min and Min is the safest combination of course :)
You can't go wrong with any of the data in reloading manuals but it is only a starting point.
I don't know if there are any spreadsheet templates out there. It doesn't have to be fancy and you're only recording data most of the time. No fancy formulas required. Just copy the reloading manual info and start adding your own data.

For non-handgun use, I'd also suggest looking at 185gr bullets
A lot of people I know find hem much more accurate than the shorter 158gr bullets

Also for gallery rounds 38spl load data will be fine for 357mag loads. My club has a velocity cap and 357mag loads for Ramshot True Blue would exceed that but 38spl won't. I prefer to use 357mag as they feed better for me and have less jump to rifling thus improving accuracy. My go to load for 38spl is bullseye though.
