Why are magazines so expensive for something that is either
pressed steel and a spring or moulded plastic and a spring?

Perhaps because it is usually a monopoly and we have to pay it?

More popular the rifle/magazine is the greater the chances that someone will spend the money to make a clone of the mag and the cheaper it will be as they'll be more likely to get their money back, e.g. 10/22 and AR magazines.

And given that most functioning problems with firearms are down to either the ammunition or the magazine...then having a substandard magazine will NOT be an experience to make for a good days shooting.

Try making some yourself to save a few quid.

Russian and Chicom AK mags are cheap enough and often cheaper here than the US, I've got a couple of rare experimental Izhmash aluminium waffle mags that I could sell for a huge profit in the States, the same goes for "long top" Bakelite mags. Dragunov mags are more expensive with a premium on ones with metal followers at around £50-60 each.

I'm after a spare mag for the STG, $30 in the US, £56 over here! Considering they come from inside the EU I think that's insane!

For the US based stuff; it's expensive to get them out of the country in the correct and legal way, and you have to buy in reasonable bulk to make it worthwhile.

My most recent import charges included:

Dept of state export license
International freight shipping
Import Processing
Airline Handling
Delivery to Kent + 18% FSC
DUTY & VAT (2% & 20%)
Advancement Fee on Duty & VAT : 4% on TOTAL Amount of Duty & VAT.

And you have to add some on top to make it worthwhile actually doing it in the first place.

Even with all those charges; some places are still hideously expensive.
