Of course, if it were to be just 3 guns, then it would have to be the Holy Trinity:
.455 Webley Service
.303 SMLE
.303 Vickers HMG

I have a beloved Enfield collection which would take up another 200+ slots if increased to all the ones I want, so I will interpret the question as "5 dream guns that you are not allowed to own in Nanny State UK":
1. the specific L1A1 I had on issue in 1983 (a genuine sub-MOA rifle with service RG)
2. the HK 417 I borrowed in a hot and dusty place (which, IMHO, should replace the L85 as UK service rifle)
3. Bren L4
4. my old Webley MkVI
5. my old CZ75

My original idea was actually more "if you move to a country where you can own 5 guns only" what would they be, irrespectively of type and cost - the post has now taken a life of its own because I did not define the parameters very well at the start

In that case I'll have a:
Bofors
105mm Light Gun
FN MAG
L1A1
CZ97B

In that case put me down for:
.22 Ruger Mk 1 or mk 11 pistol (Like the one I had to surrender years ago)
.45 Colt gold Cup (Like the one I had to surrender years ago)
Thompson 1928A1 (Like the one I had to surrender years ago but in full selective fire)
Match grade M14 ( In proper semi-auto not like the straight pull I have now.)
Match grade AR15 ( In proper semi-auto not like the straight pull I have now.)
If you upped it to 6 guns, I'd add an L4.

Seems to me that nearly everyone would like a Bren/L4....

MG42...seriously.
Sig550 Commado select fire (brilliant on semi auto)
Browning .50cal MG
Vulcan Cannon and Mounts......and hanger full of ammo
