I don't know much about Salmon (Carp fisherman) - Are the two fish in the photos the same species (was the first one a male?)?....and what is the preference for eating, between species/sexes?
Both the same species (Salmo Salar) ... the first was a male and the second a ripe female. Males grow the hooked Kype from their lower jaw and it becomes larger as they enter and remain in the freshwater. Neither of those were really edible as they have been in the river too long - when they enter from the sea they are silver and gradually turn the brown colour as time progresses which is very obvious in the male. The female was a possible for smoking but being full of eggs they are returned at this time of the year. I did get a sea trout which was fresh and a wonderful silver colour, but no picture!
