It's a tough one. Personally if I don't have it, it's listed as out of stock.
The difficulty for the little guy is to keep stock levels up of all variants of all the lines you sell. Then when you're ordering stuff for stock, it's has to be of a reasonable size otherwise the shipping eats into your already small profits.
Add on top of that export license processing time, some manufacturers are on a 30 day lead time; it gets difficult to keep everything in stock..

I know that good things come to those that wait........ BUT I DONT WANT TO WAIT
I just got something from the states and it was posted on 24th was examined by UK border control on 27th then it took till the 3rd to get to my local sorting office for them to tell me the charges before they would release it. The Royal mail handling charge of £8 was more than the vat due on it. So shipping from states to UK was really fast then it hit uk post for its delays.

I always find it quicker and easier to track it online and as soon as it says its awaiting payment of customs charges contact the depot and go there in person to pay and collect. Quite handy for me though as the majority of major couriers have their 'Newcastle/North-east' depots 10mins from me

UK gun "retail" websites are appalling in most cases. Sites which say 'Phone us to Order' should be shut down.
Grr.
If a site says: "Phone to Order", "Price on Application", "POA", "Call for prices" then I will just avoid it unless absolutely necessary.
