I use the full version of MS Outlook and it has the capability to request a "Delivery Receipt" and a "Read Receipt".
The first proves that it was delivered to the recipients server and cannot be blocked. The second shows the recipient has opened the email - however it is possible to stop the automatic sending of "Read Receipts" which negates the effectiveness if someone does that. For anything important I will always request both and am surprised at the number of times I only get the delivery receipt, however I do have the proof of sending.
